Started fishing again and caught this using my hook. Said (Gasping for air) for a few minutes than died. Is this an Aquarium fish? I don't have any experience with aquariums yet so any help is appreciated. Also are there other fish or items that are new?

It is an aquarium fish. Before you would need a special net to catch them, now some of them you can find in specific regions.
For other aquarium fish you need to use a bait (add it to the fishing pole).
If you want to keep it you should have a fish bowl in you pack (you can get it from a fisherman), you can also try a pet resurrection potion on it, I've not tried it myself but I heard that it works.
You can also cut it and get special fish steaks.

Other new fishing related stuff is fishing in swamps, you can get some deco items and stash notes, they work the same as soses but on swamps.

I dont think we have bait yet but you can buy a lure from a Fisherman NPC and that allows you to catch aquarium fish.

Yes we do, liches for example, drop red worms.

Not really. I remember liches dropping red worms when I was doing Mistvale almost a year ago. No idea how long before that they were added.
