I'm sure some more experienced people will come along and help u out, but u may want to check out Allans Gear guide. Ive been here a while but I play pretty casual, so its still a bit confusing to me, so I can understand your confusion.

I'm not sure what stage of the game you are at, but something that will improve survivability a lot is having full resists.
Getting the highest dex you can, up to a max of 220, while getting resists as high as possible will provide the greatest survival.
For damage output you will probably find increased mana/mana regen and increased stamina/stamina regen useful as you need stamina to swing and mana to use specials.
Bonus HP and HP regen are nice too, but Dex, Str and full resists are a top priority really, unless you're talking relayers, in which case Allans guide is very good for planning out what you're going to do.

At the start of the game you want a suit that adds up to 100% Lower Reagent Cost (LRC). Your pets will fight for you for the most part, so mainly you just need to neither run out of spell reagents nor spend all your gold replenishing them.
A little later you'll want a suit that's high luck. Better luck will improve the drops you get in the good hunting grounds.
Once you can afford it you'll want a suit that's high bonus dex. 220 dex gives you instant heal which lets you take on all but the most powerful adversaries in the game.
Beyond that you'll start to build up your relayer suit. That's a whole other can of worms you can read about in the wiki.

When young physical resist is important as is adding in some LRC.
As your toon develops you want to add in +8 dex and STR pieces because, once you hit 220 dex the game changes dramatically because you can insta heal from all dmg as long as you don't get one shotted. STR lets you do more DMG and have more HP.
A you approach peek UO maxing out strength/HP, spell damage increase and reflect physical DMG becomes the goal. (right now the spells from my bow do more DMG per shot then the arrow itself)
Welcome here and I hope you stay
